Joanne Slavin is a professor in the Department of Food Science and Nutrition at the University of Minnesota - Twin Cities, College of Food, Agricultural and Natural Resource Sciences. She teaches Advanced Human Nutrition, a writing intensive course, and has authored more than 350 scientific articles with her current and former graduate students. Her research focuses on dietary fiber, carbohydrates, whole grains, protein, gut health, brain health, and sustainable agriculture. She has contributed to the understanding of dietary needs across the lifecycle, food processing, nutrient fortification, and sustainable food systems. Joanne Slavin has served on the 2010 Dietary Guidelines Advisory Committee and is a member of numerous scientific societies including the Institute of Food Technologists, the Academy of Nutrition and Dietetics, and the American Society for Nutrition. She has given over 350 scientific presentations worldwide. Her academic background includes BS, MS, and PhD degrees from the University of Wisconsin-Madison, and she is a Registered Dietitian. Her research interests include the relationship between human health and food intake, especially dietary fiber and protein, as well as systematic reviews of diet and cancer outcomes, iodine intake, and the impact of food processing and ultra-processed foods.
